Daddy had a Sweet Tooth!

I will be out of town this week with my 9th grade girls at BIG STUFF Camp in Panama City Florida!!! As I am sure they will keep me super busy, I am going to combine some of my posts this week. I will be checking comments and email!!! I am sure I will NOT get a lot of sleep this week but I thank GOD for the opportunity!

Tuesday Tag-Along

Father’s Day is always bittersweet for me. My father, Henry Jones, Jr. went to be with the Lord in 2002. It is amazing that it has been a challenge to sustain family traditions without him. He had such a loving and kind spirit with a big booming voice. He had so many friends that brimmed in and out of our house at various holidays and there was always plenty of food! My mom is a great cook and unfortunately, I did NOT get the cooking bug. I don’t know if it is that I feel inadequate because she can cook so well, or what.

I am a pharmacist by trade, so I am a recipe girl. Women in my family who cook good ‘ol home cooked food, don’t seem to use recipes! They just cook! When you ask them how they made something, they say things like: “You put a little of this and a pinch of that”. If they do muster the energy to write the steps down, they inevitably leave something out! You see in the south, when you don’t make the best potato salad and your macaroni and cheese is not “requested”, you get asked to bring drinks, napkins, or flatware, to family gatherings.

About five years ago, a very sweet lady named Mildred Council (who owns the soul food restaurant, Mama Dips) was on The Good Morning America show on the campus of my Alma Mater, UNC Chapel Hill, making a Pecan Pie. The recipe seemed so simple that I immediately went to the website to get it! I used the recipe to make Pecan Pie for Thanksgiving that year!!! It was actually pretty good!

Since then, I was given Mama Dips’ recipe book as a gift and I have used it to become the down home cook I always aspired to be!!! One dessert that I have perfected and made my own is Strawberry Cobbler! Believe it or not, but I can actually make it without looking at the recipe! I guess cooking is one arena that practice does actually make perfect (or at least more confident)!!
My Daddy LOVED sweets! He always had dessert after dinner even if it was a few cookies.

Sunday morning, while I made Strawberry Cobbler for our family cookout, I looked at my favorite picture of the two of us and remembered how his eyes used to dance when he talked to me.

In true Father’s Day tradition, I bought ties for hubby from the girls but I also made MY strawberry cobbler. My Daddy would have flipped for my Strawberry Cobbler.

I would love to share my recipe with you (it is adapted from the one in the Mama Dips Recipe Book ):

Ingredients:
2 buckets of fresh strawberries or 2 bags of 16oz frozen strawberries (frozen works better for the winter)
1 small packages of strawberry Jell-O
1 cup of sugar
Pinch of salt
1 tablespoon of cornstarch
2 boxes of Pillsbury Pie Crusts (The kind you roll out)—She recommends making your own but know this Diva likes things EASY!!!
Cinnamon Sugar

Preheat oven to 375. Hull and wash the strawberries. Cut each strawberry in half or a little more if they are large. Drain them in a colander then place them in a large bowl. Mix the Jell-O, sugar, salt, and cornstarch together and pour the mixture over the strawberries. Cover the bottom of a 13 x 9 baking dish with 2 Pillsbury Pie Crusts overlapping. Sprinkle the crusts with Cinnamon Sugar. Put the mixture of sugar, salt, cornstarch, Jell-O and berries into your 13×9 baking dish on top of the crusts. Dot the berries with butter and sprinkle with a little more Cinnamon Sugar. Place 2 more Pillsbury Pie crusts over the berry mixture. Sprinkle with Cinnamon Sugar. Make small slits in the crusts with a knife. Bake on the lower rack of the oven for 1 hour and 30 minutes. An hour may do if you don’t like a flaky crust! This recipe will serve 10-15 people. Super easy to cut in half!!!
